Bok Scrumptious Salad

If you don’t know by now I am a BIG salad person.  It’s just an easy way to densely pack a bunch of vitamins into a meal that your body craves (whether you realize it or not).

There are two tips to taking a good tasting salad to another level of GREATNESS:

1) Organic Lettuce – I am sorry to all you out there that think it doesn’t make a difference but I am here to challenge you on it.  Yes, it is a bit more expensive but honestly it will put your taste buds in a happy dance every time that crisp lettuce enters your mouth.

2) Rinse, spin and dry – invest in a salad spinner if you do not own one yet.  There is nothing worse than heavy, wet, sloppy lettuce.  (enuff said)

This salad is NUTRIENT PACKED
You can feel real good about eating this salad.  Food is fuel to our bodies and we sometimes can forget that we eat to live and not live to eat (one of my favorite mantras btw).  Some of the main ingredients are power packed with goodness.

Red cabbage – when is the last time you ate red cabbage (aka Purple cabbage)?  Well, the color of the cabbage in itself screams superfood. The rich red anthocyanin polyphenols provides anti-cancer benefits.  It’s also packed with Vitamin C and K.

Almonds – They are among the healthiest of tree nuts.  Why?  They are rich in vitamin E, calcium, magnesium (mineral that helps keep blood pressure normal, bones strong, and the heart rhythm steady) and potassium.

There are two reasons that make this salad scrumpdeliocious
1) This salad contains 3 different greens that brings different textures to your palette.  You’ve got the purple cabbage, Bok Choy and romaine lettuce.
2) This salad also has a topping that will make you forget you are eating a salad.  The topping includes plain ramen noodles, slivered almonds and toasted sesame seeds!  It’s the crunchiest salad you will ever eat.

INGREDIENTS

  • 1 bunch of bok choy, cleaned and sliced
  • 3/4 organic red cabbage
  • 1 bunch of organic romaine lettuce, chopped.
  • 4-5 pieces of green onions, chopped
  • ¾ Cup of butter
  • ¼ cup olive oil
  • ¼  cup slivered almonds, toasted
  • 1 oz of sesame seed
  • (2)  6oz packages of Ramen noddles

FOR THE DRESSING:saladdressing

  • 1/2 cup olive oil
  • 1/4 cup white vinegar
  • 1/4 cup red wine vinegar
  • 1/3 cup white sugar
  • 3 tablespoons soy sauce

 

INSTRUCTIONS

FOR THE LETTUCE

  1. Chop romaine lettuce, red cabbage, Bok choy and green onions.  Soak, rinse and dry each type of lettuce in salad spinner one at a time.
  2. Locate a large bowl or large casserole pan to accommodate all the lettuce.  Place into container one layer at a time and place a paper towel in between each layer (Romaine lettuce – paper towel, red cabbage – paper towel, Bok choy -paper towel and scallions. Saran wrap it and place into refrigerator.)  Congratulations your lettuce is now undergoing the crisping process.

RAMEN TOPPING

  1. Preheat your pan and add butter and olive oil onto a medium flame.
  2. Take your two bags of Ramen noodles and smash the noodles into pieces.  *Quick tip is to smash the noodles in the bag before opening the bags.  Place the bag on a kitchen counter top and position the palm of your hand on the bag and apply pressure against the noodles until they break.
  3. Place ramen noodles, almonds and sesame seeds onto pan.  Stir ingredients so they are mixed evenly.  Saute until the mixture becomes a golden brown.

DRESSING:

  1. In a glass jar with a lid, mix together olive oil, white & red vinegar, sugar, and soy sauce. Close the lid, and shake until well mixed.

READY TO SERVE:
   8. Remove the paper towel from your lettuce.  Toss and mix bok choy, lettuce and
       cabbage, green onions, almonds, and chow mein noodles in a salad bowl. Toss
       with dressing, and serve.  

Tip*
If you are preparing this dish ahead of time do not mix the ramen topping and dressing until you are ready to serve.  The salad will become soggy otherwise.
